The restaurant, opened by Chef Zaiyu Hasegawa in 2007, has been favourite of the Asia’s 50 Best Restaurants voting Academy since it debuted at No 37 in 2016. In 2022, Den has also become the first Japanese restaurant since 2013 to be gain the title of ‘The Best Restaurant in Asia.’

The restaurant’s chef Supaksorn 'Ice' Jongsiri grew up in close contact with his grandmother’s southern cooking. Jongsiri doesn’t only cook southern Thai food, but is also known for transforming the flavours and memories of his encounters with the southern Thai cultures into an innovative cuisine. His explosive flavouring compromise no chillies and spices.

The restaurant is known for its plush counter seating, which runs three sides of a large open kitchen, where chef Hiroyasu Kawate and his crew work. Florilège also allows guests to watch the chef and his crew prepare menus of creative French cuisine.

Bangkok, Thailand
Despite sounding like a French restaurant, the name Le Du actually means 'season' in the Thai script. Seasonal Thai ingredients, as the name suggests, are the focus through a menu of regional dishes interpreted through a modern, French-lens.

The Chairman follows an original ingredient-driven – and concept-inspired – path and uses sourced seasonal ingredients to yield wholly new contemporary Cantonese dishes. Chef Kwok Keung Tung’s prized delicacy ‘steamed flowery crab’ from the South China Sea is known for its sweet taste. In As per the recipe, it is steamed with 15-year-old Chinese wine, chicken fat and clam juice, and served alongside chicken oil and flat rice noodles.

Osaka, Japan
This restaurant’s name ‘La Cime’ comes from the French word for ‘peak’ or ‘summit’. It has steadily risen in popularity, since opening in 2010 in downtown Osaka, to become a highpoint of dining for gastronomes visiting the Kansai region of Western Japan.
Rank 7: Sühring
Bangkok, Thailand
Thomas and Mathias Sühring’s namesake restaurant opened in 2016 and was designed to look like a house. At Sühring, both twins embraces local, seasonal products and luxury ingredients, which they plate with a minimalist aesthetic. Located in a tranquil neighbourhood in the centre of Bangkok, Sühring features four different dining spaces, including an open kitchen where diners can watch the chefs cook.

Singapore
The restaurant is known for its chef Julien Royer’s food and its best-in-class hospitality. Odette sources quality products from specialist artisans across the world – from Europe to Asia and Australia. Odette had spent two years at the top spot in the Asia’s 50 Best Restaurants list from 2019 to 2020.
Rank 9: Neighborhood
Hong Kong, China
Neighborhood, located in a hidden laneway, surrounded by rowdy bars, wet markets and antique shops, at first glance looks like an unlikely gourmand’s destination. However, diners come from all over town for a taste of chef-owner David Lai’s simple, appealing, mostly French cooking. Despite having no website, marketing or even an Instagram account, the restaurant is still booked out for weeks in advance.

Bangkok, Thailand
Chef Thitid ‘Ton’ Tassanakajohn’s, the man behind Asia’s 50 Best stalwart Le Du, latest venture sees him return to his roots with a traditional menu of authentic Thai dishes. Nusara, which is named after Ton’s grandmother, is a tribute to the chef’s culinary inspiration.
Rank 21: Masque
Mumbai, India
Founded by chef Prateek Sadhu and director Aditi Dugar, Masque revolves around a tasting menu-only concept. It focuses on seasonal and local Indian ingredients. Sadhu and Dugar aimed to change the way Indian food is perceived around the world, the report added, elaborating on why the restaurant was picked to feature on the list. Sadhu left the restaurant in 2020.
Rank 22: Indian Accent
New Delhi, India
Indian Accent was founded by chef Manish Mehrotra. The menu offers the country’s cuisine with a creative touch, complete with global ingredients and techniques. Small bites such as the pumpkin bitterballen with mustard and coconut, and squash curry with paneer and roast potato are some of the popular choices. The dessert menu with contenders such as soft baked chocolate with fresh berries and basundi is also one-of-a-kind.

New Delhi, India
Located on the ground floor of The Leela, Megu is a Japanese restaurant that also boasts an excellent sake menu. The miso grilled chicken with charred scallions, the sweet and tangy 24-hour braised pork belly, or the Scottish salmon steak with teriyaki sauce are some of the dishes that found mention on the list.
